The griddles provide us a flat cooking surface, they are best used for cooking foods that you just wouldn’t be able to cook on a traditional BBQ or grill.

The traditional use for a griddle, harking back to our diner example, is to make a fried breakfast featuring favorites such as fried eggs, sausages, hashbrowns, bacon, beans, and tomatoes.
The high heat of the griddle makes it perfect for Mexican food and can mimic a wok so you can stir-fry Chinese, Japanese, and Korean cuisines.
Traditional BBQ foods like burgers, steak, hot dogs, and chicken will all cook perfectly well on a griddle.

I think you had been coming to an old-fashioned diner, then that colossal hissing hot plate in the kitchen is an excellent example of a griddle. To put it simply, a griddle is a flat metal cooking surface that is heated from underneath. Essentially, it’s a big square frying pan.
The flat cooking surface suits foods that are granular, like rice, or liquid heavy, like pancakes or eggs. However, much like a frying pan, you can cook almost anything on it.
Can you use this on a campfire grate?
Absolutely YES. It is important to give the griddle sufficient pre-heating time to get up to cooking temperature which will be a little challenging over a campfire grate. If your pre-heating time is insufficient the griddle temp will not be even across the surface and you will have hot spots and cold spots and your food cooking experience will be disappointing. Don't rush with cast iron, especially when cooking over coals or live fire.
Learn to gauge the temperature using the holding-hand-over-cast iron. method. If you can hold your hand over to the griddle for 6 seconds before it gets so hot you whip your hand away, your griddle is about 350 degrees F.
I like this temp. for most of my outdoor cooking. If your holding-hand-over-cast iron time is 3 seconds, your griddle is about 425 degrees and is good for a fast sear. But it will incinerate your pancakes.
